Made Up Some Pickled Leeks

    Every year I make up a few pints of pickled leeks or ramps as some folks call them. I dry the leaves and add those to soups. Been thinking about making a pesto from the leaves too.

    I don't think we have leeks in texas but we do have what we call multiplying onions that look a lot like leeks. They never develop a bulb and grow in bunches.

    I bought some green onions from the grocery store years ago. Ended up planting the roots in the garden. They actually turned out to be multiplying onions. Who knew, but I still have them growing from that first start. I cut the stalls up and put them in the freezer. Don't see why those can't be canned up and pickled.
