Chicken at the ready

    I thought I would pass along this extremely easy way of preparing a chicken to add to salads and casseroles. You will need a large crock pot:

    Remove all the skin from your thawed out chicken.
    Wipe down the bottom and sides of your crock pot with a layer of olive oil
    Place your chicken in the crock pot, breast side up
    Pour one cup of water over your chicken
    Cover and set on low
    It will be ready in 5 - 8 hours.

    This makes a melt in your mouth delicious chicken. And for a bonus, you get a good amount of lean broth. One of my favorite things to do with this recipe is Chicken and Dumplings.
